Campylobacter : An Important Food Safety Issue

Popis: Foodborne diseases are an important worldwide public health issue mostly resulting from ingestion of food contaminated with pathogenic bacteria. In this chapter, we organized a general overview about Campylobacter as a foodborne pathogen, including characteristics of this bacterial group, epidemiological aspects of the disease, contamination sources, analytical methods, and perspectives for control and prevention. These microorganisms belong to a diverse group of microaerophilic Gram-negative bacteria with a spirally curved shape, highly fastidious on environmental and nutritional conditions. Despite these requirements, they have been recognized as important human and animal pathogens around the world. The consumption of contaminated poultry and poultry products are the primary cause of human campylobacteriosis, one of the most important foodborne diseases notified in the world. Several strategies have been used to control Campylobacter in food processing chain. However, many challenges must still be overcome to prevent and control this foodborne disease.
