Popis:	The commercial value of beef carcasses can be assessed by several methods including the yield of primal joints and meat quality characteristics. However, it is also important to determine the composition of the carcass in terms of lean, fat and bone concentrations, and to evaluate individual fat components of the carcass, to provide an overall assessment of the commercial value of the carcass. The objective of the present study was to evaluate the effect of slaughter weight on carcass composition of Holstein-Friesian bulls and steers offered cereal-based rations.
