Dill (Anethum graveolens) is cultivated worldwide as a fresh or dried herb and for essential oil. Indian dill, formerly classified as Anethum sowa, is a botanical variety of A. graveolens that predominates in India and South-east Asia. Dill is believed to have originated in the eastern Mediterranean. By the 17th century, it was cultivated throughout Europe and had been introduced to North America. This chapter discusses the history, importance, growing areas, etymology, morphology, constituents, cropping system (including soil preparation, sowing, irrigation and fertilizer requirements, weed, pest and disease management, and harvesting), postharvest treatment and product valorization of dill. |
