Popis: Silver birch (Betula pendula Roth.) sap is one of the prospective non−wood forest products of Central Europe, with a wide range of practical uses, especially in the food industry. Therefore, its collection and use requires reliable scientific basis starting from determining the intensity of the leak, through the variability of quality parameters, to the principles of commercial harvesting. A literature review shows that the knowledge about the use of birch sap is extensive but incomplete. So far, very detailed studies on the use value and chemical composition of sap have been carried out, however, they have not taken into account typical forest conditions, including regionalization, habitat conditions, and tree parameters. The aim of the study was to develop the methodological assumptions of comprehensive research on the use of birch sap. The novelty of this approach is the need to consider many factors influencing not only the efficiency of the sap leak, but also its quality, understood both as nutritional and health−promoting values, as well as a potential toxicological risk, and therefore factors determining suitability for processing in the food industry. It was proposed to conduct research over a period of several years in various regions of the country and in separate natural and forest regions, in which the birch resource base is the largest, including the three selected forest habitat types. The study of the variability of the leak intensity and the physical and chemical properties of the sap will be carried out with continuous collection, every 24 hours, for the entire period of the sap flow. The proposed scope of research and the described assumptions as well as methodological conditions constitute a new value, as they will allow for a comprehensive understanding of this valuable raw material, solving a scientific problem, and also constituting the basis for developing the principles of birch sap utilization – regulations necessary, if this raw material is to be obtained on a large scale.
