Heating of a monoacid diacylglycerol-α-iodohydrin or diacylglycerol-β-iodohydrin with silver nitrite or silver nitrate in a mixture of alcohol and water leads to an (equilibrium) mixture of the corresponding αβ-and αγ-diglycerides. Preparation of a monoacid αγ-diglyceride in a good yield by this method, which is due to E. Fischer, is possible only if the acyl group of the diacylglycerol-iodohydrin has a strong tendency towards migration in acid medium, thus, for instance, if it is a fatty acid radical. |
