Evaluation of Headspace Gas Sensing Techniques for Quality Assessment of Beef Using An Electronic Nose

Popis: A multidisciplinary research initiative has been developed to adapt and evaluate differentelectronic nose systems for quality assessment of lean, fresh beef. Various sensor technologies arebeing evaluated, including mixed metal oxide semiconductor sensors incorporated into areconfigurable sample flow electronic nose system. Moreover, a preliminary study evaluates howthree different sensing flow configurations affect sensor output. Hydrogen sulfide calibration gas waschosen as a controlled concentration sample gas representative of beef spoilage. Configurationswere compared using ANOVA techniques at a 95% confidence interval for a completely randomizeddesign with three configuration treatments and five replications per treatment. Results of thestatistical analysis reflecting the relationships among sensing flow configurations and extracteddynamic features are described. The performance of the MMOS-based e-nose for assessing beefspoilage over several days is also reported.
