Popis: The plant cell wall represents a major source of polysaccharide polymers for potential commercial exploitation. Understanding the mechanisms by which plants synthesis and metabolise their cell walls could lead to methods to modify polymer structures in planta to increase their functionality. This chapter provides an overview of the biochemistry of plant cell wall degradation and using pectin metabolism during fruit ripening as an example, how this may be employed to alter the chemical composition of the wall polymers.
