Abstrakt: Contents ofl (+)- andd (−)-lactic acid in 99 wines have been determined enzymatically. Alkaline hydrolysis of the wines, as proposed in the literature, should not be carried out, because erronious results are hereby obtained, due to the formation of lactic acid from the residual sugars of the wines.
