Abstrakt: The article discusses research on the impact of nitrogen on yeast metabolism and the role of nitrogen during fermentation of wines. Topics tackled in the study are the aroma compounds resulting from nitrogen metabolism, aroma compounds whose formulation is regulated by nitrogen metabolism, the use of nitrogen additions to modulate esters, and the enhancement of aroma potential of thiols using nitrogen.
