Abstrakt: The article focuses on the study regarding the comparative analysis and stability of 9-Oxo-(10E,12E)-octadecadienoic acid (ODA) and 13-Oxo-ODA isomers in tomatoes. The study utilized ultra performance liquid chromatography (UPLC) or time of flight mass spectrometry (TOF-MS) to comparatively analyze 9-Oxo-ODA and 13-Oxo-ODA isomers in various processed foods and species of tomatoes. Results show that various tomatoes contained 9-Oxo-ODA and tomato juice extracts have 13-Oxo-ODA.
