A research study conducted by the Department of Chemistry at Salale University in Ethiopia examined the levels of essential nutrients and nonessential metals in different varieties of teff, a grain commonly produced in the region. The study found that teff grains are a good source of minerals, including potassium, calcium, magnesium, and iron. However, the grains also contain toxic elements such as cadmium, mercury, lead, and arsenic.
