Abstrakt: In present investigation to find out good yield and gel strength from gelatin extracted from Talang queenfish. For this purpose, the optimum gelatin extraction conditions from Talang queenfish (Scomberoides commersonnianus) skin were studied. The 27 treatments were used for the extraction of gelatin. The effect of concentration of pepsin (0.10, 0.175 and 0.25%), NaOH (2, 3.5 and 5%), and H2SO4 (2, 3.5, and 5%) on yield and gel strength were studied. The yield and gel strength varied between the 2.26 to 13.40% and 147.55 to 230.13 g respectively. Incidentally, Out of 27 treatments, T15 gave the higher yield and gel strength of the skin gelatin as compared to other treatments. In an optimized T15 method (concentrations 0.175% pepsin, 3.5% NaOH, and 5% H2 SO4 ) recorded the higher yield and gel strength at 13.40% and 230.13 g, respectively. [ABSTRACT FROM AUTHOR]
