Es wurde untersucht, ob sich Pralinen durch einen Zusatz von Milchfett bzw. Butterreinfett gegen Fettreif stabiliseren lassen, da Milchfett als Zusatz zu ungefüllten Bitterschokoladen eine günstige Wrikung aufweist.
