Ziziphus mauritiana Lamk. (Ber) fruit is harvested at different stages of ripening in the Zambezi valley of Zimbabwe. We hypothesize that the organoleptic quality attributes of fruits depend on post-harvestdrying method and ripening stage at harvest.
