トカゲエソとグチのトリメチルアミンオキシド(TMAO)関連化合物の変化について調べた。トカゲエソ肉中にはTMAOが約25mmol/kg,グチ肉中には53mmmol/kgと多量に含まれていた。トカゲエソの場合
